He lost his mind vs. Hoffenheim. He is lucky it didn't hurt them more. The announcer said that he is "known as a hard worker, hard tackler, hard 'grafter'?" Don't even know what that last part means.

He did go pretty looney. I always watch their matches off the internet with Chinese commentary XD, but I think the commentator meant that he grafted passes together in midfield, and was a 'hard' or 'no quarter given' sort of link-up man and organizer.

Jermaine plays RMF / CM or DMF.
When he played in Frankfurt his normal Pos. was DMF.
In Schalke he also often played RMF.

Schalke don't have SMF. They play with one DMF und two CMF.

Absolutely. Jones plays more to the right side, yes. But not as RM! He clearly fulfills the role and duties of a CM.

In my opinion he deserves a higher Stamina, because he runs every minute in the game and fills most of the holes in the defence and in front of the defence, so I also think, he should get *Covering.
For Stamina, I'd go for 89.

Can we give him B in Injury Tolerance?
I missed only three games in this season, one as a ban of five yellow cards.

because I would give him 84 for Response and *Sliding and with *Covering he would be too overrated

No, he runs only into box, when it's necessary, e.g. making a double pass with someone. He stands most of the time around the box to catch a cleared flank after a corner.
Therefore he has that high value in Aggression. ;)

I think his Nationality should be named in American/German because he is not only american.

I think he deserves a MENT of 90. In Germany IMO only Olic is in his "league" in this... He even plays and fights when he is injured ;). He is a fighter from the 1st till the last minute.

His RESP may be adjusted -1, his timing could be better... A yellow card in every third game in his career ;).

In TW I see him rather not sharing a stage with Kehl, Zé and Misimovic. If I understand it right, it measures somehow if a player is doing the right things in the right moment... Correct me if I am wrong. In the case that I am right, he does not deserve a stat above 81. This weakness is the main reason why he is not playing for Germany anymore.

So my suggestions are:

MENT: 90
TW: 81
